Thai Lime and Lemongrass Chicken

This recipe is a household favourite here at Life Spark Wellness. It is SOOOOO tasty and full of fresh flavours PLUS it is super quick and easy to make.

 

It can be served with rice noodles, rice, or cauliflower ‘fried rice’ like I did last night or even over salad leaves.

Thai Lime and Lemongrass Chicken*

(serves 4)

 

Ingredients Thai Lime and Lemongrass Chicken on

2 teaspoons vegetable oil

1 tablespoon grated ginger

(use FRESH ginger – it is WORTH the effort – I use a mortar and pestle rather than grating it)

1 stalk lemongrass, finely chopped

(use FRESH – not the stuff in a jar – make sure it is finely chopped as it can be quite woody)

1 teaspoon chilli flakes

650g chicken mince

¼ cup lime juice

¼ cup fish sauce

1 tbsp sugar

¾ cup FRESH coriander

¾ cup FRESH basil

4 green onions shredded (I just chop finely)

rice noodles / rice / cauliflower rice / salad leaves to serve

 

Instructions

Heat frying pan over high heat.

Add the oil, ginger, lemongrass and chilli and cook for 1 minute (lemongrass will soften a little).

Add the chicken mince and cook, stirring 6-7 minutes or until cooked through.

Stir through lime juice, fish sauce, sugar, making sure sugar dissolves. Finally just before serving stir through coriander and basil until just wilted and green onions soften slightly.

 

That’s it! Done! Winner winner chicken dinner!

Serve with your choice rice noodles / rice / cauliflower ‘fried rice’ / salad leaves.
