Winter Wellness Challenge Day 8 – Eat vegetables that are in season

Many of us have become used to being able to buy most veggies all year round, even when they’re out of season. But, buying seasonal produce will generally be tastier and cheaper, will have less of an environmental impact, and provide better nutritional variety in your diet!Day 8 - Eat winter vegetables

Vegetables currently in season include:
Root veges such as turnips and swedes, parsnips, and celeriac, as well as brussel sprouts, broccoli, cauliflower, snow peas, pumpkin & kale.

Your challenge is to make winter vegetables the hero at dinner tonight, perhaps a hearty soup, roast vegetable salad, pumpkin soup, steamed and seasoned veges with some lean protein, or maybe a stir fry like the chicken, cashew and broccoli stir-fry recipe I posted back in March.
