Lemon & Coconut Bliss Balls

Last week Life Spark Wellness hosted ‘Barriers, Bits and Boobs’ – a fun and informative night discussing sports bras, boobs, pelvic floors and incontinence, as well as learning how Wellness Coaching can help you make lasting change to your health, fitness and well being.  The night was supported by Simone from Healthfocus Physiotherapy, and Marg from Donna Bella Lingerie.  There were lots of giggles and a lot was learned by everyone who attended, including myself.

 

As a special treat for our tea and coffee break, I brought along Lemon & Coconut Bliss Balls – made be yours truly.  The recipe was from the lovely Cassie Heffernan at Nourish Me Up, and they were a hit, both on the night and with my family who managed to score a few left overs.

 

These yummy bliss balls are super easy to make, with only 6 ingredients and have no added sugars or nasties.  Try the recipe for yourself and let me know what you think in the comments below (oh and the recipe for the choc coconut date balls that I made will follow soon!)

 

Lemon, Coconut Bliss Balls

Ingredients

1 cup of dates
1 cup of coconut plus a little extra for rolling
1 cup of almonds
Zest & juice of 1 lemon
1 cup of cashews
1/2 a 270ml tin coconut milk.

Instructions

It’s as easy as 1,2,3….4

Place all ingredients in a food processor and ‘Whizz’

Shape in to balls.

Roll in coconut.

Place in fridge to set for a few hours – then store in fridge in an airtight container.

ENJOY! – and try not to eat them all at once 🙂

 

Note: I made them smaller than Cassie and made close to 40 balls
