Chocolate, Coconut & Date – AMAZE-balls!

I made these chocolatey-balls-of-goodness for the ladies who attended the ‘Barriers, Bits and Boobs’ event a few weeks back and promised them this recipe.  I also made Lemon & Coconut Bliss Balls and posted that recipe, courtesy of Nourish Me Up earlier. Both these super yummy treats were a hit both on the night and with my family.

Keep in mind, that even though they are nutritious, are full of fibre and have no added sugar, both the Bliss Balls and AMAZE-Balls do have calories 🙂 However, because of the fibre and healthy fats you will find them quite filling so are unlikely to eat them all in one sitting, as tempting as it may be!

Rightio! On to the recipe!

 

Chocolate, Coconut & Date AMAZE-Balls

(suitable to freeze)

 

500g pitted dates

1 cup cocoa powder

1 1/4 cup shredded coconut

1 teaspoon cinnamon

1/3 cup desiccated coconut

 

Place all ingredients, (except desiccated coconut) in a food processor and blend for 1 minute.

Add 4-5 TBSP hot water and blend for 30 seconds – 1 minute, or until mixture is finely chopped and just smooth.

Scrape processor sides with a spatula and blend again.

Shape tablepsoonfuls of mixture into balls and roll in dessicated coconut.

Place in fridge to set for a few hours – then store in fridge in an airtight container.

ENJOY! – and try not to eat them all at once 🙂

  Tonight I made these AMAZE-Balls again, and swapped the cinnamon for 1 teaspoon of peppermint essence.  Choc-mint is my FAVOURITE combination – and these do NOT disappoint!

I may have to freeze them to stop me eating them all in one day 🙂
